手沖咖啡流速很慢 - 咖啡討論

小弟是個手沖咖啡新手
在手沖咖啡上遇到幾個問題
首先就是悶蒸過程中咖啡粉幾乎不太膨脹
是否是跟咖啡粉不是現磨有關係呢?
小弟都是拿去請店家磨完後密封起來要喝再拿出來
另外就是第二次注水後總覺得過濾流速很慢
倒一下子水的液面就整個蓋過咖啡粉上
導致都要停下來慢慢等水再退去
請問這是什麼問題?
是豆子磨得太細嗎還是還有可能是哪方面的問題
但我都是跟店家說豆子要磨成手沖用的大小
備註 濾杯濾紙都是 HARIO 02 V60
手沖溫度約是83度
