蜜處裡豆的發酵味 - 咖啡討論

大家好
小弟近日入手半磅蜜處理豆
這支豆子我是在店裡喝過喜歡所以買
沖煮方式跟店家一樣是用賽風(TCA-3)
手法我也盡量摹仿
但是很奇怪,不太能煮出店裡頭的味道..
請容我描述一下:(店)
第一口尚未降溫就有明顯酸感
發酵氣味充足,每一口都喝的到
但是我煮的:
等降溫才變得比較酸
發酵味時有時無
有時還苦苦的
粉量:20g 200cc
我就是下粉攪一次,大概40秒再攪一次就沖水了
水溫約略在90~93之間
不曉得是沖煮時間還是水溫的影響較大?
拜請諸位給點建議吧Orz
