最近聽朋友說
沖煮的狀況會影響到澀感
如口腔哪個部位感到澀
就代表沖煮中哪的過程出問題(或是出什麼問題)
先不論豆子的好壞
真的有這種說法嗎?
因為有看到一篇說澀是因為有機酸被沖出來
但是有機酸會選擇停留澀感的地方嗎@@...
