手沖新手苦惱中 - 咖啡討論

各位師兄師姊晚上好!
小弟最近入手V60組合和新匿名二義式版,
第一包豆是Cama的肯亞AA,
目前是用17g ,92°c 悶蒸30秒,兩分半內加到磅秤250g。
香氣方面:都只有濃厚的焦味,沒有花果香氣。
口感方面:有調整過溫度88-92和研磨刻度,但尾韻焦味都很重,口感很混濁。隨著練習酸味有出來,但苦味和焦味還是很重。而且中段的口感很空洞,會有美式的錯覺。
想請問各位哥哥姊姊,
一、配方上的250ml是指沖泡時的250克?還是指最後要得出250克的咖啡?因為拿掉濾紙和粉後,咖啡液只剩180幾克,有點不明白,究竟水量要多少?
二、目前看到分享的匿名手沖刻度是一圈半到兩圈,不知道新版義式是否也適用?還是太細造成焦苦味很重?
三、請問有沒有比較適合新手練功的豆子?風格明顯,可以容易判別失誤和進步。
