有前輩建議試試攪拌法或其他手法,我試了兩個方法,練習不同沖法確實滿有趣的,以實驗
的結果是對這包豆沒有明顯幫助(沒有豆袋上標注的風味也沒有咖啡烘焙香氣)
Amis 攪拌法
水粉:20克豆 偏粗C40 30格 280克水 水溫93度
0-120 攪拌流光
120-230 打水繞圈
230-280 定點注水
總時間 2分左右
試喝:仍只有茶味但稍有甜感
James Hoffmann a better 1 cup V60 technique
水粉:15克豆 偏細C40 20格 250克水 水沸騰 濾杯滾水預熱
0-50 悶蒸45秒(晃動15秒)
50-100(1分內)
100-150(1分20內)
150-200(1分40內)
200-250(兩分內)
這次實驗比較失敗,水很快淹了起來,注水到200克時已經超過兩分鍾,也許要再磨粗一點
試喝:仍只有茶味但稍有苦味
接下來會跟老闆反應看看(雖然這包快被我實驗完了)謝謝大家!
