這兩天跟同好分享購買的兩款義式咖啡豆,
在同好家中,使用flair 58,espresso
喝起來明顯比我手中flair經典版好喝,
探究其原因,應該是出杯的溫度比我高,
自己在家中做的espresso 大概就是
略高於體溫(雖然很努力將汽缸&活塞預熱,
注入的熱水也夠高溫,但出杯的espresso
溫度還是50。c不到-應該是咖啡粉餅&粉杯
吸走許多熱能)

看了半自動咖啡機做的espresso 提到
溫杯的重要性,於是拿手邊有的用品,
試著將手上製作的espresso 提高溫度,
來到60。c以上(約63。c),
結果成品變得非常順口,各種酸甜苦平衡,
也不像平常刺激感那麼重!
分享一下自己的做法
150cc量杯注入滾水約50~60cc,
然後將100cc的量杯放入(如圖示)

然後移至flair經典版粉杯下方,
接著將預熱好的汽缸套上粉杯,
注入熱水、裝活塞壓力錶開始製作
espresso ,下方承接的量杯溫度很夠,
然後得到一杯溫度超過60。c
的espresso 。(如圖示)

心得
主要應該還是溫杯,端看手邊有什麼
合適的用具(我只是提供我的做法,
大家參考看看就好)
希望大家能借由溫杯,將手上的
espresso 變得更好喝。

感想上,不溫杯&溫杯
比較喜歡溫杯的espresso 就口時,
杯子本身溫度夠,咖啡液在口中
還能是溫熱感,味道被放大,
口感體驗佳。
不溫杯的espresso ,咖啡液降溫比較快,
杯口溫度低,入口後口感溫溫的,
喝起來味道比較悶。
以上是對比後的感想。
