我想我問的問題有點蠢
但跟自以為很懂得老爸爭論的結果是
他覺得我根本不懂咖啡(我真的不太懂就是了...)
他很臭屁的跟我說,我就跟你說你還不懂咖啡,你硬要爭你是對的我也沒辦法!
搞得我好火啊!!!!!
先就我的觀點來說
我覺得手沖咖啡無法表現出濃縮咖啡的味道
原因是因為關鍵的高壓可以將咖啡豆中的咖啡脂等成分萃取出來
在同樣的水量下,利用高壓可以將咖啡的濃度及其關鍵成分加以提升
如果沒有高壓,個人認為除非很長時間慢慢滴(在此指手沖),才有可能提升濃度
但一定與用咖啡機做出來的味道不同
但就我爸的論點來說
手沖咖啡只要掌握咖啡粉的粗細跟咖啡粉的量,沖泡的時間,沖泡的水量
例如比較細的咖啡粉,讓味道容易出來
比較多的咖啡粉量,讓濃度提升
沖泡時間拉長,手沖不要一次到底,分次慢慢沖
水量減少一點,讓濃度提升
諸如此類的,就可以達到濃縮咖啡的味道
請問板上有沒有人可以提供驗證的方法
想證明手沖咖啡可/不可以表現濃縮咖啡的味道?
以上所指的濃縮咖啡是指義式濃縮咖啡喔
