前言:
咖啡的過程無外乎-生豆處理、烘焙、研磨、萃取,其中最重要的環節在於原材料,也就是咖啡豆的選擇上面。然而我們除了原材料之外,我們同時可以根據研磨以及萃取的手法不同而達到我們想要的風味,這次的菜單主要是提供給喜歡手沖的新手朋友一個參考。
此次我們會分為:磨豆機、濾杯、磅秤、手沖壺、與溫度計來分別
磨豆機:磨豆機的品質決定之後萃取的走向,而且磨豆的切削效率以及刀盤的磨耗也是一個重要考量。為此,我個人推薦一定要使用金屬刀盤的磨豆機。
泰摩-栗子C2(售價1500,五星刀盤):泰摩的磨豆機一直以來以高CP值著稱,也推出蠻多經典產品,比如冰瞳濾杯、手沖壺還有磨豆機系列。栗子C2雖然是目前泰摩的入門手摩,但其切削品質跟萃取的表現十分的優良,雙軸承的設計保證在研磨時可以保持穩定,同時小巧的機型也適合女生來用。
1Zpresso-Q2 (五星版1790;七星版2380):1Z的磨豆機我自己也有ZPRO跟KPRO,對於Q2而言外觀的質感以及整體的設計非常的合理,也十分的省力。最重要的是軸承支撐採取金屬使整體應力耐受度更高,有附刷球在清潔上面更方便。是目前市面上非常優惠的七星刀盤。
濾杯:濾杯主要有分陶瓷、樹酯以及玻璃,這三個的流速的走向以及比熱性大致可以這樣比:
流速:樹酯>玻璃>陶瓷
熱容:陶瓷>玻璃>樹酯
當然,對於新手而言,便宜的樹酯濾杯不代表不好,輕巧而且摔不破,同時便宜的優點都是無法取代的優勢,同時快流速的設計也使可以更大程度製造香味出來,以下是幾個濾杯分享。
Hario V60-樹酯版(售價210):簡單、輕巧又經典的V60,快流速與錐形結構設計,能讓咖啡粉充分浸泡,又能充分萃取咖啡。
KONO 01塑膠濾杯(售價450):半肋濾杯的設計使流速會在注水水面高低不同而產生巨大變化,可以做出多層次的口感。
泰摩 冰瞳濾杯00號塑膠版(售價210):完全貼合濾紙的設計可以更均勻地對咖啡粉萃取。
三洋 CAFEC花瓣濾杯樹酯版(售價280):花瓣型排水設計保持水流順暢,同時過濾層較深而能帶出咖啡風味。
KALITA 101 陶瓷版(售價310):梯形濾杯最經典。
Hario V60 日本有田燒 (售價480):厚實陶瓷,兼具保溫效果並讓濾杯內的溫度較一致性的維持。
磅秤:磅秤重點除了可以秤出精確到小數點第1位外,另外一個重點就是可以精準的計時。目前入門的計時磅秤大概在500左右。
手沖壺:手沖壺決定水流的大小與走向,謹推薦以下幾款歡迎補充
HARIO 雲朵不鏽鋼細口壺(售價790):這款好處是可以用IH爐,而且水流也可以很隨心所欲控制大小,但需要練習許久。
CUG 細口手沖壺 600ml 德川細口壺(售價500):小巧的設計可以一手拿起,而且水流也很細膩
泰摩魚Pure手沖壺(售價990):水流非常穩定,目前用這款溫控壺當主力
分享壺:你家的馬克杯也能當下壺,或者買個hario 玻璃王套組(濾紙+v60 02樹酯+下壺)
溫度計:可以精確測量到小數點第一位為主,大概200-300左右,以數位溫度計為優先。
總計=1500+210+500+300+500=3100
