請問一下,小的剛接觸義式咖啡機
上網google了關於crema的資料
大部分都是說萃取不足的話顏色會太淺,偏金黃色或白色
萃取過度會變成深色甚至焦黑
可是又看到某本書上寫,crema顏色太淺是太晚結束萃取,造成萃取過度,顏色開始變淡
或泛白前應停止沖煮
這樣書上寫的不就是越萃取顏色越淺嗎?
