手沖咖啡風味問題與技術改善? - 咖啡討論

各位前輩好(手機排版抱歉)
目前是剛開始玩手沖咖啡的新手,技術不是很穩定,配備也很陽春
但希望自己的技術能讓我品嚐到好豆子被好好烘焙之後的風味XD
最近買了一款新的豆子(淺焙)
店家描述的風味是莓果與花香
第一天我沖好咖啡後,因為覺得需要先墊墊胃
所以吃了巧克力口味的餅乾
再喝咖啡後,果然有喝到莓果香
第一次品嚐到莓果香的我很開心!
但隔天 早餐有吃其他麵包後
再盡量複製相同沖法,卻喝不到莓果香QQ
再隔天再試一次,一樣喝不出莓果,
於是我決定再咬一口巧克力餅乾再喝一口
竟然莓果香就出現了!!
我想應該是某個味道被巧克力餅乾蓋住後
才凸顯出莓果香嗎?
那我該如何調整沖法呢?(詳下述)
(總不能每次都先咬餅乾再喝吧XD 餅乾總會吃完)
還是說我就是個木舌?(哭)
裝備:
濾紙/大創三孔陶瓷濾杯/手沖壺/
熱水壺(溫控不佳,只會顯示5的倍數XD)
磨豆機是1z的ks,用刻度13磨
沖法:
放好濾紙後,先用熱水(85~90度之間)沖過
倒掉廢水
倒咖啡粉16g,抖一抖鋪平
悶蒸(約10秒?水量就是蓋過咖啡粉)
下熱水240ml繞圈圈,不斷水
尾段看快碰到咖啡粉平面時拿掉(這裡也很不固定,不曉得如何改善)
飲用前搖均勻
