這邊討論的是一本英文書,
名叫The Professional Barista's Handbook,
雖然說是Barista's handbook,
但是著重在espresso上面,drip coffee或是茶就不是很多,
其中drip使用SCAA粹取理論,蔡炎龍大人曾經有精采解說,

當然洋人在HB也有介紹此本書,曾經一度有sample可以看,
目前好像是沒有了,大家有興趣可以參考,

書中提到espresso萃取便是以fines migration模型去解釋,
跟neilpeng最近要寫的東西非常類似..
