前幾天,從參加團購的板友那分了一點Kenya AA Kirimara Estate
使用mini500試著烘至一爆密集(13分鐘)下豆,剛烘完時味道,酸香甘
甜皆備,但略帶鹹味。感覺像聞花果香,喝著酸梅湯。
結果放了幾天後發現,一開始的鹹味變重了,其它味道被蓋過。
本來的酸梅湯,成了鹹水一杯,雖然有耳聞肯亞可能帶些許鹹味。
但似乎不像我手上這杯鹽水。
是豆子本身的特性嗎?還是烘焙時出了問題呢?
若下次打算再烘焙至同樣的烘焙度,是否有改進方向呢?
看上次的烘焙記錄,烘到7-8分鐘時,曾因風門控制不當,導至溫度
在一分鐘內僅升一度(但沒掉溫),會是這部份的失誤嗎?
抱歉問了那麼多問題,但因為機器是借來的(豆子也是跟別人分來的)
無法一次次的試誤,還請板上眾多的前輩不吝賜教,謝謝。
