各位好
開始手沖約莫一年的時間了,最近覺得沖不出自己想要的味道~
比較常買 伊索比亞、瓜地馬拉、哥斯大黎加等
近半年發現比較喜歡尾韻深長帶甜味的,口感清爽帶層次
喜歡像蜜處理的尾韻,像是喝過阿里山蜜處理有黑糖感、或是其他紅糖、蜂蜜感
之後可能會主要買蜜處理或是描述X糖尾韻甜感的豆
看過影片介紹的甜感,似乎不是指尾韻的甜味,而是剛入口和酸感的比例
也較少介紹咖啡的尾韻和嘴巴留存的味道
器材如下:
手沖壺Takahiro
V60 02、三洋花瓣
栗子C 刻度18~20
水溫86~92(插溫度計)
粉水比20克沖300~320
試過學長、VWI介紹等沖法
約莫是40悶蒸,斷水2次
最近試4:6
所以給水是
40+80+90+90
都覺得入口後就結束了~幾乎沒什麼回甘
偶爾出現一點點尾韻是該包的最後一泡.....才發現有點浪費了一整包
也無法確定說到底是因為水溫~濾杯~ 還是手法
不知道想喝出帶甜香的尾韻可以如何調整
最近一次喝到有尾韻的咖啡,詢問店家是用聰明濾杯~
