請教秤及手沖架使用觀念 - 咖啡討論

各位前輩好,小弟涉獵手沖咖啡資歷不長,對於秤及手沖架的使用有些疑慮,
想藉由討論驗證自己的想法。
一開始我都是用濾杯放在小量杯,只考慮得到的咖啡量多寡,那時候還納悶為
何大家都是用秤在手沖咖啡,直到有天想通我這種方式無法保證注水的量,這樣跟
我所設定的粉水比不相吻合。
之後,我看了最近某位世界冠軍出版的某某地圖書籍,才想通大家手沖咖啡用秤的
理論是否如我現在所想的。
依照以前上化學課所學,一杯固定濃度的液體,不論從中取出多少,濃度皆不會改
變,好比重量百分比濃度10%的鹽水,從中取100cc或是50cc,濃度皆相同。
所以我目前都是例如粉水比15g:250cc,那就是粉放到濾杯後,連同下壺一起歸零
,這邊因為都會歸零所以濾杯下無論是放馬克杯或是雲朵下壺都沒差,之後注水到
秤顯示250g,濾杯內會殘留一點咖啡捨棄,因為如前面所述即使捨棄這些咖啡整體
濃度也不會改變,簡單說,只考慮多少水經過了多少粉而已。
到這邊為止都跟書上簡述的差不多,但我就不懂手沖架的使用了,除非把整組手沖
架都放到秤上歸零,如果沒放在秤上又水壺裡沒有固定多少水量那就無法得出到底
用了多少水去萃取不是? 那這樣不如就濾杯直接放在下壺上還比較精準一些。
我知道這樣沖泡咖啡有點像在要求做實驗,但我想知道是否我的想法哪裡有缺失,
