請教煮Syphon的問題 - 咖啡討論

附註:影片中的師傅使用的是一次攪拌法。
我來分享我看到的"現象",
0:27--搖晃下座:這是為了讓下座的水溫更快達到該有的溫度而已,沒有其他用意,
(當然,這樣比較帥~~~)
0:35--加水 :很簡單,水不夠~~
0:50--搖晃已經
加了咖啡
粉的上座:很簡單,再次讓下座的溫度更快均勻,還有,這樣比較帥~~~
0:55--該耍帥的動作都做完了,沒梗了,所以將上下座結合~~
1:07--水開始上升。
1:12--開始快速攪拌,目的是為了降溫,為什麼?如果溫度太高,咖啡粉是會焦的,
煮東西一直用大火炒,不翻滾,東西也會燒焦,一樣的道理,所以跟圈數無
關,炒菜應該不會算翻了幾次鍋吧= =。
1:18--停止攪拌,因為豆子已經均勻打散,且溫度又下降了,此時開始等待萃取
(影片中的師傅是將"沫"做在豆子裡面。)
1:38--上層開始快要爆開,表示溫度到了,不能再繼續萃取,所以他將上座移開,
再攪拌一次(為的是增加濃度),然後關火。
這壺咖啡萃取完畢,我個人認為應該是清香的咖啡,順口不刺激,
純度和濃度也都還好。
