烘豆的色澤 - 咖啡討論

最近分別從網路購買了熟豆
a豆:無色澤,比較深褐色,淺中烘,
喝完後,感覺有點比較重的油秏味。
巴拿馬—神曲莊園咖啡豆

b豆:有光澤!(非星巴克黑油油一片那種),
褐色,淺烘,喝完後,完全沒有油秏味。
朋友分的未知。
一樣的磨豆機,濾紙,水溫。
豆子應該是現磨的,注水時有明顯的咖啡氣泡。
想請問:
1 那個油秏味 是品種的關係?還是豆子放太久了?
2 熟豆光澤是代表?烘豆的技巧?豆質?味覺
