濾掛式手沖香氣不足 - 咖啡討論

第一次在這裡發文 版規研究了一下 希望沒有違反
(文有點長 麻煩小力鞭打)
最近從一個偶爾喝老媽用機器煮的咖啡的人
變成在賣場推銷咖啡的員工
不過不是要來推銷什麼的(文中不會出現品牌)
是想請問一下沖濾掛式咖啡的技巧
(已爬文 但爬來爬去都沒有很懂 只好跑來發文自己問...)
因為場地設備有限 所以老闆提供的是
一個熱水壺 都設定保溫在98度 然後沖下來就差不多90~95度
一個Tiamo的細口壺(附上溫度計 但是不裝滿就只會到80幾度)
一個玻璃量杯 每次都大約沖150CC
然後都是要沖濾掛式的咖啡包(10g)
(全烘培 研磨程度中等)
很多時候沖給客人 有的客人說酸有的說苦
還有很多說香氣不足 味道太淡
因為覺得自己技術不好 每次沖 喝起來味道都不太一樣
所以也不敢再繼續介紹產品@_@
在上班之前就有來版上調查過一下手沖技巧
無奈自己做好像總是有些力不從心
我大致上是這樣做的
1.從熱水壺把水裝到細口壺
2.打開包裝掛上杯子(玻璃量杯)
3.熱水沖下去 從中心點慢慢往外畫順時針的圈
4.第一次沖先讓咖啡粉都泡到水 有時咖啡粉會稍微翻滾上來 就把它沖下去
第二第三次才再把水量弄多一點
有時候看到有咖啡粉沒被沖到我會轉杯子
但這樣好像就不是順時針了...
我基本上都是有客人詢問我才現場沖泡
想說讓客人喝到剛泡好的會比較好喝
但是因為沒有保溫設備
所以之後的客人就會喝到涼掉的咖啡
這樣我也不能確定咖啡味道到底是好是壞
(第一天上班擔心味道不好結果試喝到自己心悸= =)
隔壁櫃有在喝咖啡的大哥跟我說 手沖的本來就會比較淡
是這樣嗎?
但是有客人跟我說"我就是要買濾掛式的 那沖出來這麼淡我不想買了"
(題外話 那個客人說不久前才拿到麝香貓咖啡...好羨慕@_@)
不好意思好像有點離題
總之是想問說
要怎樣沖才比較能增加咖啡聞起來的香氣?
