淺談伊索比亞豆 - 咖啡討論

趁早上腦袋清醒時來掉一點書袋,
現在正是伊索比亞的咖啡產季,
每年的11月到隔年的2月,
伊索比亞的生豆處理是這樣的,
水洗和日曬並不會同時進行,
而是水洗先開始處理,而第三個月才處理日曬,
在伊索比亞的分級制度,以前是用缺陷數來分級,
現在則是缺陷和風味一起綜合評判分級,
所以g1就應該有g1的風味水準,
伊索比亞在出口的時候都會在麻袋上標明級數和處理法,
之前我曾說過本人不再碰90+以及其副牌,
因為他們在出口後就把麻袋換掉,用自己的紙箱和麻袋裝。
好聽點叫商業機密,難聽點就是有操作空間,
我這種魯蛇都中招買了爛貨,更何況是剛入門想試試高價豆的玩家了。
沒有人會想花15鎂買1公斤的G4吧,至少我不想。
伊索比亞的咖啡標示,都是產區,處理法 ○○合作社○○處理廠和級別。

這個標示就犯了低級錯誤了。
伊索比亞的好豆,我想很少人會拿去做二爆後的風味吧,
大家迷戀伊索豆,不外乎花香,莓果,柑橘等等的風味,
這些味道幾乎是在烘焙的前段才能保留下來的,
能做淺焙的豆,不外乎豆子本身充實度要夠,
鮮度也要好,風味才會清楚,香氣才會上揚,
回到這次爭議,
我一直的想法是這樣,板上自烘玩家藉由這樣的方式團購,
用本板的資源去練刀,可以多練多烘點豆,
得到板友的意見回饋,對於烘豆是可以得到進步的,
跟團者可以用明顯低於市價購得,這是雙贏的。
這次的團購平均售價在300上下,並沒有明顯低於市價,
305半磅還略高於市場約定成俗的定價。
水洗批次標明CR 94,
坦白說,就算是本板的前輩大神們拿現在這批豆也很難拿到這個分數,
因為,現在台灣買得到的伊索水洗豆都算是去年的豆了,
這些前段風味所剩無幾,已經是強弩之末,
日曬豆還相對好一咪咪,
本魯買的新產季水洗霧谷還在海上飄流,三月才會到貨。
拿別人的CR出來,對於新手或沒烘豆的板眾,能夠分辨其代表的意義嗎??
回到我提出的三成管銷費用,
本魯老家家業是原物料貿易商,管銷約莫三成,
貿然在板上提出,是經驗反射,快人快嘴,
若讓大家不悅,在下感到十分抱歉。
我只是直覺想保護大多數板友的權益,沒料到後續風波,
再次向大家致歉。
這篇文章一出,又要得罪生豆商了,
實話難聽,能當鳳凰誰想當烏鴉。
