手沖與賽風的差別?? - 咖啡討論

想請教各位專業的大大們
若是用手沖的話大多建議90℃上下
原因是?
因用賽風煮的話,咖啡粉所接觸的溫度差不多99~100℃
若是溫度來說,高溫應該是破壞風味
但低溫也有可能萃取不出原有的風味
所以想請教這兩煮差別與好壞,謝謝^^
