味道偏酸的豆子放久酸味都會變調 - 咖啡討論

最近連續兩支豆子都是買酸味明顯的類型
分別是檸檬樹莊園跟衣索比亞西達摩
這兩支在新鮮的時候酸味表現都很明顯,也很有特色
西達摩還有一點點薑的味道,更是令我印象深刻
不過這兩支偏酸味取向的豆子,放兩個禮拜之後酸味都會"變質"
感覺上有刺激性,以我個人感受來說就是入口之後會像喝檸檬原汁一樣,喝下去會抖一下
大家喝偏酸的豆子也會有相同經驗嗎??
我的豆子保存方式都是放在有排氣閥的豆子中放在陰涼地方,每次也都有把空氣擠出來
我想應該是放太久所氧化出來的物質造成酸味變質,各位認為呢?
