大家安安,小弟咖啡板新手
最近看到一些關於厭氧發酵的心得分享
聽說香氣甜感十足,聞起來像草莓優酪乳(?
但由於這些咖啡豆單價偏高,嘗試前想先向各位前輩請教一些疑問
1. 雙重厭氧、厭氧日曬、厭氧水洗,這些處理法在風味上的差異如何?
2. 常看到天堂莊園有清檸香頌、玫瑰茶、艷夏花荔、熱帶風情等品項,但好像又有看到
有再分成波旁、卡杜艾、藝妓等品種,所以上述四種是處理法的差別嗎?(例如發酵環境
氧通比例不同?)還是這四種就是指不同品種的豆子呢?
3. 想請問各位大大有沒有推薦厭氧效果明顯的豆子(與日曬、水洗喝起來明顯不同),
或是讓您印象深刻的豆子,希望能在 $300 /100g以下
有看到浪醫師大大在前幾個月有分享價格親民的雙重厭氧豆,但當時還沒入坑QQ
