最近敝工作室在嘗試新的烘焙方法,玩了幾鍋卻苦無分享對象(?
所以想說來板上分享想法順便分一點試喝交交朋友XD

上圖是這次嘗試的新方法裡比較漂亮的一支曲線(雖然成品坑坑巴巴的QQ
主要的想法是運用大火快烘去挑戰極淺焙的表現,結果出現類似幾年前喝北歐極淺的味道
這手法的入豆鍋溫拉高到250度,接著便以小風門配高溫火源進行烘焙
並且在5分40秒左右進入一爆密集,溫度大概205度
並在一爆密集20秒後下豆降溫,此時溫度約落在216左右
如圖有四處ROR陡降,皆是分批調大風門造成,但這部分就先不多說了
也許未來可以再分享這部分的心得。
(主要是因為這部分還沒抓到一個具體的想法啦)

這次的水洗耶加我自己覺得跟兩年前喝瑞典的Drop Coffee的味道非常接近。XD
茶感明顯但酸澀味淡,又帶有和一般手法不同表現的果香和甜味。
