"Turbo Shot" -
就是Michael Cameron跟Christopher Hendon想出來的那招,
簡而言之就是低劑量粗粉低壓力短時間的Espresso,
下面是我用Flair 58操作Lance Hedrick的Recipe紀錄:
豆子:衣索比亞 水洗 希達馬 娜法莎 74158 21/01淺焙 17g
濾杯:VST 18g Ridgeless
磨豆機:Niche Zero
刻度:19
沖煮用水:自調。KH 48/GH 90/TDS 137
Flair 58預熱等級:High
加水溫度:100度
濃度計:Atago PAL-COFFEE
操作:快速加完熱水跟轉回氣壓計之後直接一秒內壓到6 Bar,
接下來一直維持6 Bar到壓出51g咖啡液時拉起結束。共花20秒。
成果測量:17g in/51g out、TDS 7.50、萃取率22.50%。
壓出來的SOE Crema不厚,但是風味非常均衡飽滿,
數學Espresso還真的很有可玩性。
