豆子賞味期?醒豆時間? - 咖啡討論

想要請教一下各位板友
開始買精品咖啡一年左右,
喜歡淺烘焙到中烘焙的咖啡豆,
買過台中四個店家,
店家一:
歐舍跟我說他們的豆子都是當天烘的,
兩星期內要喝完,喝不完倒不如丟掉。
因為味道都變了。
店家二:
Lulu說他們的豆子建議要兩個星期的時間醒豆。兩星期後才喝才好
店家三:
黃金咖啡館說他們的豆子放兩個月才正開始香,放六個月後若變質變差一包換三包
店家四:
個人工作室,烘完隔天就可以喝,喝不完冰冷凍可以冰上半年味道都很不錯。
小弟是木舌,同一時間很難比較兩種豆子,都是喝完一包才買一包。
想要請問眾版友 會造成這些說法的差異是為什麼?
有人能經驗分享嗎?
