手沖新手研磨顆粒粗細問題請教 - 咖啡討論

各位好 
 
最近剛開始玩手沖也做了一些功課
大概了解研磨粗細對咖啡口味的影響(在其他因素不變情況下,越粗會越酸,越細會越苦)
我也參考了某個世界手沖冠軍的 YouTube 手沖教學,影片中他建議可以一直往研磨越細的
調,直到受不了過細所帶來的苦味為止)
 
所以我目前的理解是,在苦味可以接受的情況下,研磨越細是越好的,因為越細可以萃取出
越多風味,不知我這個理解是否正確?
 
另外有個疑問是,我目前用的摩豆機是泰摩栗子c,他建議的手沖研磨刻度是 15-24格(數
字越小越細),但我現在已經調到 10格這麼細了(官方建議的義式刻度)還是不覺得苦 XD
,請問這樣是正常的嗎?還是我手沖手法有問題?
 
附上一些我的環境參數:
豆子:耶加雪菲 G1 日曬 淺培
濾杯:hario v60
水溫:90-95度左右
手沖法:悶蒸後直接一次注水到結束
