手沖問題 - 咖啡討論

小弟剛入門手沖沒多久
有個小問題想請教大家
手沖一開始用少量的水做悶蒸的動作
但是因為咖啡粉不新鮮了
所以粉沒有澎起來多少 導致粉牆很低
依照注水不能超過粉牆的高度(淹過去)的原則
我第二次注水的量就很少(因為粉很低 水太多一下就淹過去)
變成要注水很多次才能沖到我要的量
這樣多次注水對咖啡味道有沒有什麼影響?
還是說我可以在悶蒸的注水或是第二次注水時加大水量把粉牆沖高?
