大師教訓的是!
想當初第一次對「完整萃取」這個說詞感到困惑,
大師開頭一句就是:
對「完整萃取」的解釋,除了質疑別人的舌頭之外,
您曾經正面回應過嗎?
這個說詞有其他的立足點嗎?
似是而非的標準竟然可以評斷咖啡的優劣,大師行事果然玄妙之極。
就算劣者能夠分辨一杯義式裡混了多少種豆子,
哪怕只是單品,不同的沖煮或烘焙條件也會產生截然不同的風味,
請問這時該如何定義「完整」?
況且,就算劣者分辨不出生澀味,
不能分辨一杯義式裡混了多少種豆子,
也無法對一個理性客觀、有憑有據的理論造成任何威脅,不是嗎?
所以在下想藉由James Hoffmann的文章,來與大師的論調作連結,
想不到一直到今天,大師始終避重就輕,完全不理會劣者的疑問。

萃取和濃度無關?
大師的意思是不同意「單位水裡面取了太多咖啡溶解物質」這樣的說法嗎?
