咖啡處理過程的後製添加物疑問 - 咖啡討論

本身只是一般業餘的愛好者,最近看了2個情形產生了疑問,並不是質疑誰或是要挑戰誰,只是想釐清問題。
看了某篇雜誌專欄,一位生豆採購商拒絕採購某批生豆因為在後製處理添加了天然肉桂去增加肉桂香,事先不知情下原本給予極高評價。
最近結束的比賽,我們的選手在創意咖啡的項目有添加人工精油增添飲品的香氣,包括評審跟民眾都是給予認同。
我的疑問是,同樣是後天增加飲品本身的風味,在接受度上卻是不同的,我自己猜想是否創意咖啡的項目可以允許天馬行空的處理,但一般的正式飲品就不允許?
我真的不是要質疑選手本身,只是想知道是否在不同要求下標準是有不同的,因為很明顯比賽是允許這樣做的,會有問題是因為某麵包事件中大家對香精是很反感的,我只是有疑問而已,希望這個問題沒有冒犯之處,謝謝。
