冰釀 冰滴 發酵問題 - 咖啡討論

我平常做冰釀是,放置冰箱8~12小時,將粉過濾後就直接喝
或是放一天慢慢喝,通常不會放到三天以上
之前試過幾批放三、四天的,我覺得風味並沒有第一天直接喝來得好
不過冰滴的話,滴完後我會密封再冰個2、3天,口感確實不同,有明顯變化
放到三天通常更加香醇、風味更能出來
不曉得是不是冰釀口感本身偏輕薄的關係
所以多放幾天效果並沒有冰滴來得有效?
因為最近去了一間店家,店家說他們的冰釀還在發酵中,今天沒辦法出
所以想上來問問大家,各位做好的冰釀,也會多放幾天再喝嗎?
