四六沖法與悶蒸問題 - 咖啡討論

最近在嘗試Tetsu Kasuya的四六沖法
自己都採15g沖250cc水,40/60/50/50/50的方式處理,
但是有個疑問想請教各位,
這個沖法注水也不算小,研磨度又偏粗,
如果是使用v60的情況下(非後來出的專用款),
會不會很容易變成萃取不足的情形?
另外,想請教在悶蒸的時候,
有時候會發現悶蒸完中間容易塌陷一大塊,
這個部分是因為悶蒸水流太大造成的嗎?
